Quick And Tasty Chicken Biryani Recipe

1KG golden sella rice

3-4 bay leaves

2-3 cinnamon stick

1 piece of mace

4-5 cloves

5 green cardamom

1 tbsp cumin

For CHICKEN GRAVY :

1kg Chicken

*first marinate the chicken with ½ tsp salt and ½ lemon juice

4 large sized onions

2 tbsp ginger garlic paste

6-7 cloves

5-6 green cardamom

2-3 cinnamon stick

12-15 peppercorns

½ tbsp cumin

3 star anise

½ piece of mace

4-5 green chillies(crushed)

½ tsp turmeric powder

1 tbsp coriander powder

1½ tbsp crushed red chillies

1 tsp Kashmiri red chilli powder

1tsp cumin powder

1 tbsp salt

¼ tsp food colour

1½ tbsp homemade biryani masala

2 large sized Tomato puree

mint and coriander leaves

oil for cooking

For curd For curd mixture:-:-

250grm curd

1 tsp sugar

¼ tsp food colour ½ tbsp biryani masala 1 tbsp kewra water

Add these. Shake the spices a little. As soon as the spices start to cook here, add two tablespoons of garlic ginger paste. When the garlic ginger paste gets heated up, add it in it. We will fry the chicken well on this for four to five minutes. Till the color of the chicken does not turn white, but before that, we will add four to five green chillies which we have grinded on this. We fried the chicken with oil. And fried well with green chillies

Now we will add some spices to it, yes we will add one table spoon of turmeric powder, we will add one and a half teaspoon of coriander powder, here we will add crushed red chilli, if you do not have crushed red chilli, then add the regular chilli, one teaspoon of that, we will add Kashmiri red chilli, which gives a very amazing colour, one teaspoon of roasted crushed cumin, now we will add about one table spoon of salt, because we had already added half a teaspoon of salt earlier, we will add four teaspoons of orange food colour, which gives a very amazing colour to the chicken, I have taken two tablespoons here, whose recipe we have given on the channel and it is very amazing.

You can make it at home and store it, otherwise you can also buy it from the market. So here we will put one and a half teaspoons from two tablespoons and save the rest here and along with this we will put two big tomatoes here which we have made a puree of. What will happen with this is that the spices will get cooked well with the tomatoes. Mix it once in this manner and after that cover it and let it cook. Here we have to cook the chicken for 10 to 12 minutes at 80 degrees.

Do not cook it completely or else what happens is that the chicken in the biryani starts breaking because we will also cook it with rice, so here we will cook till 80, check it in between and make the flame of the gas medium. Now here we have taken rice, here we have taken 1 kg of rice along with 1 kg of chicken and the rice here is we have taken golden sella rice which we had soaked for two hours, first we washed the rice thoroughly and after that we soaked it in clean water here, if you want you can also take basmati rice here, so here we have kept the water to heat now we will put some whole spices in it, in which we will add three to four bay leaves, two to three pieces of cinnamon stick here, we have taken a small flower of mace, take half, if it is not small then five to four, here we have taken cloves, five green cardamoms and here we have taken one tablespoon of cumin seeds and here we have taken eight to ten black peppercorns, we will put these spices and in it after adding water here Let it heat up together so that it gets a good flavour. So look, the water has started boiling here. Now we will add salt to it. Here we will add four teaspoons of salt because if we add a little more salt, it gets dissolved with the water. Here we have taken half a lemon. We will add its juice here. The rice becomes fluffy.

We have taken six to seven whole green chillies. We will add it. We will add a little coriander here in this way. This gives a very good flavour to the rice. And we will add a little mint here. So now we have taken half a cup of mint here and one cup of mint here. Well, if you want, you can take out these thick spices here in this way and remove them. The flavour of all the things has come inside the water. So we had taken out the water of the rice here. We will add this. We will keep the flame high. We have to add the rice on high flame only. After adding the rice, mix it once in this way so that the rice does not settle down from all sides and opens up in this way. We have to cook the rice on full flame for seven to eight minutes. We do not have to cook it completely, we need to leave a little bit of it, that means we have to boil it till 90, so let it boil, let’s take a look at the chicken, here I have taken 250 grams of curd, we will add it in it, we will add one teaspoon of sugar, we do not need to add much here, we will add a quarter teaspoon of orange food colour, biryani masala which we had saved, we will also add one table spoon of kewra water in it, if you do not like its flavour then you can skip it here, but it tastes amazing, the sugar here, there is a bitterness of the color

It reduces it so we will whisk it well here, there should not be any lumps in it, so we have whisked it well here, see, it has become absolutely smooth, we kept checking the chicken in between, see, the chicken has cooked well here and to a great extent, the chicken had released water here, which is absolutely fine here, now you will weave it here, we will dry some water here, so from the coriander mint that we have taken, we will put some coriander and some mint here, while stirring in this manner, we will keep some here for layering, now we will take half the onion from the onion that we had fried here and crush it with our hands in this manner, and put it in it, after adding onion and coriander mint, we have weaved it well and you see how great it has become and it is not too dry either, you do not have to dry the masala too much, in this way you will see, the masala has become cracked here and it is absolutely perfect now here we will do it on one side, chicken in this manner We will make a small space in the middle. When you do all these steps, reduce the flame of the gas or you can also turn it off. So here is curd, we will put it in this manner. We will put some coriander and mint here. We will put fried onion here while spreading it. Now let’s check our rice here. See if the rice is cooked well, then we will turn off the gas. We will take out half a cup of water from it with a strainer. We will take out the rice in this manner. We will take out the water in this manner and we will put the color that we have put on the chicken here. Again add coriander and mint. Fried onion and the remaining rice here will be put on top of it in this manner. After putting the rice, we will put the remaining coriander and mint. We will put fried onion. The water that was saved from the rice will be put in this manner. After putting onion, we will put two tablespoons of Desi Ghee here, which gives a very good flavour and the rice becomes very shiny. Now we will put a cloth over it. We will cover it with a cloth. We will give you strength. You can also put the foil paper. We will put it in this way. We will cover it with a lid and fold the corner. After putting it, keep something heavy here in this way. The flame of the gas will be kept on medium for two minutes and after that we will make the flame of the gas low for 10 minutes and then we will leave it here on the closed gas for 10 minutes. The more you keep it for 10 to 15 minutes, the more fluffy and delicious the rice will become. It was left on the closed gas for 15 minutes. Now see it here. Let us remove it here.
