Chicken Tikka Kabab Recipe

FOR MARINATION
500grm boneless chicken
1 tbsp ginger garlic paste
3 tbsp curd (hung curd)
½ tsp pepper powder
1 tsp coriander powder
½ tsp garam masala
1 tsp cumin powder
1 tsp dry Fenugreek leaves
1 tbsp tikka masala
1½ tsp kashmiri red chilli powder
1 tsp salt
3 tbsp oil
1 lemon juice
FOR SAUCE MIXTURE :-
1 tbsp soy sauce
3 tbsp Tomato ketchup
½ tsp salt
½ tsp kashmiri red chilli powder
½ tsp chaat masala
1 tsp sugar
FOR GRAVY
1 tbsp oil
4 garlic buds
½ medium sized onion (chopped)
½ red bell pepper
1 medium sized onion (sliced)
½ tsp cumin powder
½ tsp pepper powder
1 green chilli
some chopped coriander

Today we are going to make Chicken Tikka Bites – this is a very delicious, restaurant style recipe that is incredibly tasty. It is very easy to make and everyone in your family will love it. First, we’ve taken 500 grams of boneless chicken — specifically thigh pieces, which are juicier. You can use breast pieces too, but thighs give better flavor. We’ve washed the chicken thoroughly and drained all the water using a strainer. Make sure there’s no water remaining.
To marinate the chicken, add 1 tablespoon of ginger paste. Then, add 3 tablespoons of thick yogurt (drain the water using a tea strainer beforehand). It’s important the yogurt is thick and not watery.
Add ½ teaspoon black pepper powder, 1 teaspoon coriander powder, ½ teaspoon garam masala, 1 teaspoon roasted crushed cumin, 1 teaspoon roasted and powdered kasuri methi (dried fenugreek leaves), and 1 tablespoon tandoori or tikka masala.
Add 1½ teaspoons of Kashmiri red chili powder, less than 1 teaspoon of salt (adjust to taste), the juice of one lemon, and 3 tablespoons of vegetable oil. Mix everything thoroughly so the chicken is well-coated.
Now let this marinate for at least 1 hour. If you have more time, you can marinate overnight. In summer, refrigerate it; in winter, you can leave it on the kitchen counter.
Heat a pan and add 2 tablespoons of oil. Spread it well. Place the marinated chicken pieces one by one (don’t overlap them). Pour all the remaining marinade over the top of the chicken.
Cook on medium flame for about 5–6 minutes on one side. Once it starts smelling great and browning slightly, flip the chicken and cook for another 5–6 minutes.
You’ll notice the chicken releases its own juices — especially from the yogurt and meat itself. We didn’t add water on purpose, as that natural moisture is enough to cook it through.
Once the chicken is cooked, turn the flame to high to evaporate excess moisture and help the masala coat the chicken nicely. Then turn off the heat.
For a smoky flavor, place a small steel bowl in the pan, add a piece of hot charcoal, and pour a little oil or ghee on it. Cover the pan for 3–4 minutes to infuse the smoke flavor. If charcoal isn’t available, you can heat it over direct gas flame.
Now heat another pan and add 1 tablespoon of oil. Add 4 finely chopped garlic cloves and sauté for about 20 seconds (don’t brown them). Then add half a medium-sized chopped onion and fry until slightly soft.
Add half a red capsicum (or green if you prefer) and lightly fry. Also, add a medium-sized onion cut into chunks (not too fine) — same size as the capsicum. Fry for a few seconds.
make the sauce, take a small bowl and add:1 tablespoon soy sauce3 tablespoons tomato ketchup½ teaspoon salt½ teaspoon Kashmiri red chili powder½ teaspoon chaat masala1 teaspoon sugar (optional, but recommended for better taste) Mix everything well.
Once the onions and capsicum are lightly sautéed, add the prepared sauce to the pan. Mix well and cook it for a few seconds until it slightly thickens
Now add the cooked chicken tikka bites into the sauce. Then add:👇🏻
½ teaspoon roasted crushed cumin
½ teaspoon black pepper powder
1 finely chopped green chili
Some finely chopped fresh coriander
Turn the flame to high and mix everything well. And there you go — your restaurant-style Chicken Tikka Bites are ready! Super tasty and easy to make. No one will believe you made them at home!
