Veg Palao Recipe
Ingredients:-
2 cups of basmati rice (soaked for 30 mins)
1 medium sized onion (sliced)
7-8 cashew nuts
1 piece of mace
7-8 peppercorns
2 cinnamon stick
3 cloves
2 green cardamom
2 star anise
1 tsp cumin
5-6 green chillies
2 medium sized tomatoes
1 tsp salt
1 large sized potato
½ cup fresh peas Some fresh mint leaves
Oil for cooking
For curd mixture:–
2 tbsp curd
½ tsp turmeric powder
1 tsp red chilli powder
*½ tbsp coriander powder
½ tbsp fennel powder
½ tsp garam masala
1 tbsp dry Fenugreek leaves

Step 2: Preparing the Rice
We are using 2 cups of Basmati rice for this recipe. Soak the rice in water for 30 minutes. You can also use Sella rice if you prefer.
Step 3: Heating the Oil
Now, place a pot on the stove and add 2 tablespoons of oil. We won’t need much oil, just enough for frying. Once the oil heats up, add a large-sized onion, sliced. Fry it until it turns golden brown.
Step 4: Adding Whole Spices
Once the onion is brown, lower the flame and add whole spices. Here’s what you need:
7-8 cashews
1 small flower of mace
2 bay leaves
7-8 black peppercorns
2 cinnamon sticks
3 cloves
2 green cardamoms
1 teaspoon cumin seeds
Fry these whole spices for a while.
Step 5: Adding Ginger-Garlic Paste
After frying the spices, add 1 tablespoon of ginger-garlic paste. Stir and fry until the raw smell disappears.
Step 6: Adding Green Chilies
Once the ginger-garlic is fried, add 5-6 green chilies, slit in the middle. Stir-fry them until well-cooked.
Step 7: Adding Tomatoes and Potatoes
Now, add 2 medium-sized tomatoes, chopped into small pieces. To soften the tomatoes, add 1 teaspoon of salt (you can adjust the salt later). Let the tomatoes cook until soft. Then, add 1 large potato, cut into pieces, and ½ cup of fresh peas. Stir everything together and cook for a few minutes.
Step 8: Cooking with Water
Add 2-3 tablespoons of water to the mixture. Don’t add too much; just enough to create steam. Let it cook on low flame for 5 minutes until the potatoes and peas are softened.
Step 9: Preparing the Spice Mixture
Now, let’s prepare the spice mix:
2 tablespoons of yogurt
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust according to taste)
* ½ table spoon coriander powder
½ teaspoon fennel powder
½ teaspoon garam masala
1 tablespoon kasuri methi (dried fenugreek leaves)
Mix all the spices in the yogurt and set aside.
Step 10: Mixing Spice Mix with Vegetables
Once the potatoes and peas are soft, add the yogurt-spice mixture. Stir everything well and cook on high flame until the oil separates from the spices. If the mixture is too thick, add a bit of water (about 2 tablespoons).

Step 11: Adding the Rice
Now, add the soaked rice to the pot. Mix gently, ensuring the rice is coated with the spices. Then, add 4 cups of water. If you are using a regular pot, you’ll need more water, but if you are using a pressure cooker, 3 cups of water will be enough. Mix well.
Step 12: Cooking the Rice
Add a few mint leaves and mix them in. Bring the water to a boil on high flame. Once the water is almost absorbed by the rice, check the salt and adjust as needed. If it’s too less, add ½ teaspoon more. Stir gently.
Step 13: Cooking on Low Flame
Now, lower the flame and cover the pot. Let it cook for another 5 minutes. After that, turn off the heat and let it rest, covered, for 15 minutes.
Step 14: Final Touch
After 15 minutes, open the lid and let the steam escape. Once the steam is released, gently fluff the rice with a spoon. You’ll see how beautifully the rice has cooked. It’s soft, flavorful, and perfectly cooked!
