Spicy Aaloo Katli Recipe

500grm (½ kg) potatoes

½ tsp cumin

¼ tsp asafoetida

1 medium sized onion

green chilli

chopped coriander

oil for cooking

For Curd Masala :-

3 tbsp curd

*½ tsp turmeric powder

½ tsp red chilli powder

½ tsp chilli flakes

1 tsp coriander powder

½ tsp cumin powder

½ tsp garam masala

1 tsp salt

Step 1: Preparing the Potatoes

Let them fry until the cumin seeds change color. Once done, add the sliced potatoes to the pan. Fry the potatoes on **high flame** for **4-5 minutes** to get a crispy texture.

Step 4: Steaming the Potatoes

Now, cover the pan with a lid and lower the flame to **medium**. Let the potatoes cook for a few more minutes. The steam will help soften them, while the potatoes will fry at the same time. This method will give your potatoes a perfect golden texture.

Step 5: Preparing the Spice Mix

3 tablespoons yogurt

½ teaspoon turmeric powder

½ teaspoon red chili powder(adjust to taste)

1 teaspoon coriander powder

½ teaspoon roasted cumin powder

½ teaspoon garam masala

Salt to taste

Step 6: Adding the Spice Mix

Once the potatoes are crispy and have a nice color, add the yogurt spice mix to the pan. Stir well, ensuring the potatoes are well coated in the spice mixture.

Step 7: Adding the Fried Onion

Take the **fried golden brown onions** and crush them lightly with your hands. Add them to the pan and mix everything together. The crushed onions will add an extra layer of flavor to the dish.

Step 8: Adding Water

Add **2 tablespoons of water** to the pan. This will help in making the potatoes tender and allow the spices to blend well. Cover and cook for **5-7 minutes** on **medium flame**.
