Butter Garlic Chicken Recipe
Ingredients
FOR CHICKEN MARINATION :-
1) 1kg chicken leg pieces
2) 1 lemon juice
3) 1 tsp salt
4) 1 tbsp pepper powder
5) 2 tbsp ginger garlic paste
6) 2 tsp flour
FOR BUTTER GARLIC FLAVOUR
7) 2 tbsp butter
8) 15-16 chopped garlic buds
9) 1 tsp chilli flakes
10) ½ tsp salt
11) 1 tbsp soy sauce
12) some chopped coriander
FOR SLURRY :-
13) 2 Tbsp cornflour + ½ cup of water

Step 1: Marinating the Chicken
First, we’re using **chicken legs**. We’ve taken **1 kg of chicken legs** and cleaned them thoroughly. Then, we made deep slits in each piece to help them cook evenly. Soak the chicken in a mixture of **vinegar** and **salted water** for about 10-15 minutes. This will help the chicken stay juicy and tender, and it won’t break apart while cooking.
Once soaked, we’re ready to marinate the chicken. In a bowl, combine the following ingredients:
Juice of 1 lemon
**1 teaspoon salt
1 tablespoon crushed black pepper
2 tablespoons ginger-garlic paste
Rub this marinade thoroughly on each chicken leg, ensuring it’s well-coated. Let it marinate for **30 minutes** (you can marinate for longer if you have the time).
Step 2: Coating with Flour
After 30 minutes, we’re going to coat the chicken with **2 teaspoons of flour (maida)**. You don’t need to add too much, just a light coating on the chicken legs. Once done, set them aside.
Step 3: Frying the Chicken
In a pan, add **2-3 tablespoons of oil** and spread it evenly. Place the marinated chicken legs one by one into the pan. Let them cook on medium heat for about **3-4 minutes** on each side until they develop a nice color and grill marks.
After about 15-20 minutes, the chicken should be fully cooked and tender. Once done, flip the chicken on high flame to cook off any remaining moisture and get nice grill marks. The chicken should be golden and crispy on the outside.
Step 4: Preparing the Sauce
In another pan, heat **2 tablespoons of butter**. Add **15-16 finely chopped garlic cloves** to the pan and sauté them on low flame for about **1 minute** until the garlic becomes fragrant but doesn’t change color.
Next, add:
1 teaspoon chili flakes (adjust to taste)
½ teaspoon salt (adjust to taste)
Now, mix the **cornflour-water mixture** (made with **2 tablespoons cornflour** and **½ cup water**) into the pan. Stir continuously to avoid lumps. Let it cook until it starts to thicken.

Step 5: Adding Soy Sauce and Chicken
Once the sauce starts to thicken, add **1 tablespoon soy sauce** and a little **finely chopped coriander** for extra flavor. Now, add the fried chicken legs to the pan and mix everything well, so the chicken gets coated in the delicious sauce.
Step 6: Final Cooking
Increase the flame to high and cook for **1-2 minutes** to allow the flavors to blend together. If you prefer it dry, you can cook it longer until the sauce evaporates, leaving just the flavor-packed coating.
