Spring Roll Recipe

1) 1 tsp garlic

2) 1 tsp ginger

3) 1 green chilli

4) 1 cup cabbage

5) 1 carrot

6) 1 onion

7) 1 capsicum

9) pepper powder ½ tsp

10) red chilli sauce

11) 1 tsp chopped coriander

12) oil for cooking

13) ½ cup flour

14) ½ cup cornstarch

15) salt ½ tsp water

2 tbsp flour + water

oil for frying

Step 1: Preparing the Stuffing

Let’s start by heating a **pan** on the stove. Add **2 tablespoons of oil**. Once the oil is hot, add **1 teaspoon finely chopped garlic** and sauté it for a few seconds. Then, add **1 teaspoon grated ginger** and sauté again until the raw smell of ginger disappears. Next, add **1 finely chopped green chili** and sauté everything together.

Step 2: Adding the Vegetables

1) 1 cup cabbage (finely shredded)

2) 1 medium-sized carrot (julienned)

3) 1 small bell pepper (cut into strips)

4) 1 medium-sized onion (sliced thinly)

Stir-fry the vegetables on **high heat** for **1 minute**. We don’t need to cook them fully—just soften them slightly. The veggies should remain a little crunchy for that perfect spring roll texture. Make sure the vegetables are cut evenly for a neat roll.

Step 3: Seasoning the Stuffing

1) Add 1/2 teaspoon salt (or to taste)

2) Add 1/2 teaspoon black pepper powder

3) Add 1 teaspoon chili sauce

Finally, add some **finely chopped fresh coriander** and mix again. Turn off the heat. Your veggie stuffing is ready! Let it cool down.

Step 4: Preparing the Dough for Sheets

Now, let’s make the spring roll sheets.

1) 1/2 cup all-purpose flour (maida)

2) 1/2 cup cornflour

3) 1/2 teaspoon salt

Mix these dry ingredients well. Then, add a little water at a time to make a smooth batter. The batter should be a little runny but not too thin. The consistency should be perfect for spreading it onto a pan.

Step 5: Preparing the Spring Roll Sheets

Take a **non-stick pan** and heat it on **low flame**. Add a little **oil** and spread it using a tissue to coat the pan. Now, take a spoonful of the batter and spread it thinly on the pan. Allow it to cook on low heat until the sheet starts to separate from the pan. Once it’s cooked, carefully remove it from the pan and set it aside.

Repeat this process for all sheets, layering them on a plate with some flour sprinkled between them to prevent sticking.

Step 6: Assembling the Rolls

Once the sheets are ready and the stuffing has cooled, take one sheet and place some of the vegetable mixture in the center. Fold the sides of the sheet over the filling, and then roll it up tightly, sealing the edges with some flour paste.

Step 7: Frying the Spring Rolls

Heat oil in a pan on **medium heat**. Once the oil is hot, carefully add the prepared rolls. Fry them in batches, turning them occasionally to ensure they are golden and crispy on all sides. This should take about **5-6 minutes**.

Once they are crispy and golden, remove them from the oil and place them on paper towels to drain excess oil.

Step 8: Serving

Your **delicious homemade spring rolls** are ready! Serve them hot with a dipping sauce of your choice. You can easily make these at home with fresh sheets, and they are perfect for snacks or party appetizers.
