Step 1: Preparing the Chicken
Start with **1 kg chicken**. Wash the chicken thoroughly using salted water and drain out all excess water. Ensure there’s no moisture left in the chicken. You can leave it in a colander for a few minutes so that all the water drains out. Once done, make some cuts in the chicken pieces to allow the marinade to penetrate.
Step 2: Preparing the Marinade
In a bowl, take **1 cup (200g) yogurt**. To this, add:
1) 1 tsp ginger paste
2) ½ tsp garlic paste
3) ½ tsp turmeric powder
4) ½ tsp cumin powder
5) ½ tsp garam masala powder
6) 1 tsp black pepper powder (adjust to your taste)
7) 1 tbsp tandoori masala powder
Mix all these ingredients well to make a smooth paste. Now, coat the chicken with this marinade and rub it well into the chicken using your hands. Let the chicken marinate for **at least 30 minutes**. For best results, you can marinate the chicken for **2-3 hours**.
Step 3: Preparing the Gravy
Heat **3 tbsp mustard oil** in a pan. Let it heat up properly, then turn off the gas and let it cool down slightly. Once it’s a little cool, add **6-7 garlic cloves** (crushed). Fry the garlic for a few seconds, and then turn on the gas to medium heat. Once the garlic starts turning golden brown, add **4 medium-sized onions**, finely chopped, and sauté them until golden brown.
Step 4: Cooking the Chicken
To the onions, add **2 large tomatoes**, chopped. Sauté the tomatoes for about **3-4 minutes** until they soften. Add the marinated chicken pieces and cook on **high flame** for about **5 minutes**, stirring occasionally.
After 5 minutes, reduce the flame to medium and let the chicken cook for 15-20 minutes, stirring occasionally to ensure even cooking. Check the chicken every 10 minutes to make sure it doesn’t stick to the pan.

Step 5: Preparing the Gravy
Once the chicken is almost cooked, check if there’s enough gravy. If you want a more gravy-based dish, add **½ cup of water**. Mix well, and let it cook for another **5 minutes** on low flame.
Step 6: Finishing the Dish
After the chicken is cooked, and you have the desired consistency of the gravy, turn off the heat. To give the dish an authentic smoky flavor, **smoke the dish** using a piece of burning charcoal. Place a small piece of burning charcoal in a bowl, add a few drops of oil on top, and place the bowl inside the pot with the chicken.
Cover the pot and let the smoke infuse for **1 minute**. After 1 minute, remove the bowl and open the lid. This will add an extra smoky flavor to your chicken.
