Sweet Vermicelli Recipe
Ingredients
1) 1 tbsp Desi Ghee (clarified butter)
2) 1 cup Vermicelli (Sevai)
3) 2.5 cups Water
4) ½ cup Sugar** (adjust to taste)
5) 3 Green Cardamom Pods
6) ½ tsp Fennel Seeds (Saunf)
7) 1 tbsp Raisins
8) 4-5 Cashews (chopped)
9) 4-5 Almonds (chopped)
10) Dried Coconut (optional)
11) ½ tsp Saffron (optional, for color and aroma)

Today, I’m sharing with you a **delicious and quick sweet vermicelli recipe** that you can make in just **10 minutes**. This sweet sevai is perfect for any occasion, especially during the cold weather. It’s not only healthy but also incredibly tasty. You can make it when guests arrive or whenever you feel like having something sweet.

Step 1: Frying Dry Fruits
First, heat **1 tbsp desi ghee** in a pan on low heat. Let the ghee melt, and once it’s hot.
add the dry fruits:
1) 1 tbsp raisins
2) 4-5 cashews ( chopped
3) 4-5 almonds ( chopped
4) A few pieces of dried coconut (optional)
Fry them on low heat until they turn golden brown. Don’t over fry them, just enough for them to release their aroma. After they’re done, remove them from the pan and set them aside.
Step 2: Frying Vermicelli
Now, in the same pan, add **1 cup of vermicelli** (sevai). You can use roasted vermicelli if available, or lightly roast it in the ghee for **2-3 minutes** on medium heat, stirring it occasionally. It should turn a nice golden brown color. Once done, remove it from the pan and set it aside.
Step 3: Cooking the Vermicelli
In the same pan, add **2.5 cups of water** and **½ cup of sugar**. Stir well to combine.
Add the following:
1) 3 green cardamom pods
2) ½ tsp fennel seeds (saunf)
Let the water come to a boil, and once it does, add the fried vermicelli into the pan. Stir gently, making sure the sevai is evenly coated with the syrup. You can adjust the sweetness by adding more sugar if you like it sweeter.

Step 4: Cooking and Mixing
Let the sevai cook on low heat for about **4-5 minutes** until the water reduces and the sevai absorbs all the flavor. Stir occasionally to prevent it from sticking to the bottom of the pan.
Step 5: Final Touch
Once the water is absorbed and the sevai is cooked, add the previously fried **dry fruits** into the pan and mix well. Continue to cook for another **2-3 minutes** until the sevai is soft, and the dry fruits are evenly mixed in.
Step 6: Serving
Turn off the heat and let the sweet sevai rest for a minute. Once done, serve it hot! This is a perfect dessert for the colder months or any time you want something quick and sweet.
