Sweet Vermicelli Dessert Recipe
Ingredients
1) Ghee – 1 to 2 tbsp
2) Seviyan (thick vermicelli) – 2 cups (unroasted or roasted)
3) Water – 2 cups
4) Cashews – as required
5) Almonds – as required
6) Raisins – as required
7) Green cardamoms – 5 to 6 (lightly crushed) or ½ tsp cardamom powder
8) Sugar – ½ cup (adjust to taste)

Today, we will make a delicious and very easy **sweet vermicelli dessert**. This is a quick dessert that can be prepared in just **15 minutes**. It tastes amazing and is simple enough for anyone to try. Do give it a try once, and if you like the recipe, don’t forget to like the post.
Step 1: Frying Dry Fruits
Heat **1–2 tablespoons ghee** in a pan. I am using desi ghee for better flavor.Once the ghee melts, add a handful of **cashews, almonds, and raisins**. You can use any dry fruits of your choice, and adjust the quantity as per your taste.
Fry them for **1–2 minutes** until the raisins puff up and the nuts turn slightly golden. Do not make them too dark.Remove them onto a plate and set aside for later use.
Step 2: Roasting Vermicelli
In the same ghee, add **2 cups thick vermicelli**. I have taken unroasted seviyan, but you may also use pre-roasted seviyan.Roast the seviyan on low to medium flame, stirring continuously.
Roast until they turn golden brown in color. This will take about **5–7 minutes**.Once roasted, transfer them to a bowl and keep aside.
Step 3: Cooking Vermicelli
Now, add **2 cups water** to the same pan. The water should be equal to the quantity of seviyan.Bring the water to a boil on high flame. Once boiling, add **5–6 lightly crushed green cardamoms** (or cardamom powder if you prefer).
Mix well and then add the roasted seviyan. Cook on medium flame, stirring occasionally, until the seviyan softens and the water dries up completely.

Step 4: Adding Dry Fruits and Sugar
Once the seviyan are cooked and the water has dried up, add the fried dry fruits (save some for garnish). Mix well.Now add **½ cup sugar** (adjust to taste). Stir continuously.
As the sugar melts, the seviyan will look sticky and slightly watery again.Keep cooking on medium flame, stirring in between, until the sugar water dries up completely.
Step 5: Final Cooking
When the seviyan are cooked, they will look light, fluffy, and separate—not sticky. At this stage, switch off the flame.Cover the pan for **2–3 minutes** before serving. This resting time helps make the seviyan even more soft and non-sticky.
Step 6: Serving
After resting, open the lid and garnish with the remaining dry fruits.The seviyan are now ready. They are fluffy, non-sticky, and very tasty. This dessert is quick, easy, and perfect whenever you want to make something sweet in less time.
