Step 1: Preparing the Chicken Marinade
Take **1 kg chicken**, washed well and drained of all water.
For marination, add:
1) 1 teaspoon salt
2) ½ teaspoon turmeric powder
3) 2 tablespoons desi ghee (optional but gives authentic taste)
4) 1 cup whisked plain yogurt (about 200 g)
Coat the chicken pieces well with this marinade. Cover and keep aside for **2–6 hours**.
Step 2: Frying the Base
Heat **1 tablespoon mustard oil** in a pan. You may also use vegetable oil, but mustard oil gives authentic Punjabi flavor.
Add whole spices:
1) ½ teaspoon cumin seeds
2) 1-inch cinnamon stick (broken)
3) 5–6 cloves
4) 4 green cardamoms
5) 2 black cardamoms
6) ½ teaspoon black peppercorns
Stir for a few seconds, then add **4 medium onions (300 g, roughly chopped)**. Fry for 1–2 minutes.Now add **7–8 garlic cloves** and **1-inch ginger piece (chopped)**. Fry until onions turn golden pink.
Cover and cook on low to medium flame for **5 minutes**, stirring once in between. Once onions soften and turn golden, turn off the gas.Grind the onion mixture into a fine paste without adding water.
Step 3: Making the Gravy Base
Heat **½ cup mustard oil** in the pan again. Add the onion paste and fry until oil separates and color deepens.
Now add **2 large tomatoes**, peeled and blended (without water). Fry for 5–6 minutes until oil separates.
Add powdered spices:
1) ½ teaspoon red chili powder
2) ½ teaspoon Kashmiri chili powder
3) 1 tablespoon coriander powder
Mix well and fry until the raw smell disappears.
Step 4: Cooking the Chicken
Add the marinated chicken to the pan. Lower the flame at first to prevent the yogurt from curdling. Mix well, then cover and cook on medium flame for **5 minutes** so the chicken releases its water.
After 5 minutes, uncover and fry for another **4–5 minutes** until oil begins to separate.
Add **½ teaspoon chicken masala** (store-bought or homemade). Fry on high flame for about 5 minutes.

Step 5: Making the Gravy
Add **1 cup hot water** and salt to taste. Mix well.Once it comes to a boil, cover and cook on medium-low flame for **20 minutes**, stirring occasionally, until the chicken is tender.
Step 6: Finishing Touch
After 20 minutes, uncover and cook for 2–3 minutes more to adjust thickness.Add **½ teaspoon garam masala** and **chopped fresh coriander leaves**. Mix well, cover again, and let it rest for 2 minutes on a switched-off flame (dum).
Step 7: Serving
Your Chicken Gravy is ready. The gravy is smooth and flavorful even without cream.Serve hot with chapati, or rice.
