Chicken Tawa Pulao Recipe

Today, we are sharing a special recipe with you—**Chicken Tawa Pulao**. Yes, this dish is very tasty and different from the usual chicken biryani you’ve tried. Step 1: Preparing the Masala
Take 4 green chilies and add them to a pan. Add 1 large onion, roughly chopped. Add half a cup of roughly chopped coriander leaves. Do not make a fine paste; keep it coarse. Switch off the flame once everything is slightly cooked.
Step 2: Grinding the Mixture
Now, take the mixture and grind it into a fine paste. Make sure there is no water in it. This paste will give a strong flavor to our pulao.
Step 3: Adding Spices to the Paste
Into the paste, add:
1) 1 teaspoon ginger-garlic paste
2) 1 teaspoon red chili powder
3) ½ teaspoon garam masala powder
4) 1 teaspoon roasted cumin powder
5) 4 tablespoons coriander powder
6) 2 tablespoons roasted chickpea powder
Mix all the spices well into the paste. Add 1 teaspoon salt (or as per taste). Stir thoroughly.
Step 4: Shaping the Mixture into Balls
Now, take small portions of the paste and shape them into small kofta balls. Grease your hands with a little oil or water so the mixture doesn’t stick. Place all the kofta balls on a plate, ready for frying.
Step 5: Preparing the Yogurt Masala
Take 150 grams of yogurt and whisk it well.
Add:
1) 1 tablespoon crushed red chili
2) 1 teaspoon roasted cumin powder
3) 1 teaspoon garam masala powder
4) 5 chopped green chilies
Mix everything properly. This yogurt masala will bring amazing flavor to the pulao. Keep it aside.
Step 6: Frying the Koftas
Heat 1 cup of oil in a deep pan. Once hot, carefully add the kofta balls one by one. Fry them on medium flame for about 5–6 minutes. Flip them gently to ensure they don’t break. When golden brown, remove them from the oil and set aside.
Step 7: Making the Gravy
In the same oil, add 2 tablespoons ginger-garlic paste and a little water. Add 3 medium-sized chopped tomatoes and mix.
Now, add whole spices:
1) 4 green cardamoms
2) 2 black cardamoms
3) 10–12 black peppercorns
4) 1-inch cinnamon stick
5) 2 bay leaves
Cook until the tomatoes soften and the masala thickens. Add the yogurt masala mixture we prepared earlier. Stir well until the yogurt’s water dries out. The masala should release oil.

Step 8: Cooking the Rice
Now, add 3 cups of washed basmati rice. Add 6 cups of water (double the rice measurement). Mix well. Add ½ teaspoon salt (or as per taste). Cook on high flame for 7–8 minutes until the water reduces and rice starts to soften.
Step 9: Adding the Koftas
Once the rice is half cooked, gently place the fried kofta balls on top of the rice. Cover the pan with a lid. Lower the flame and cook on dum for 7–8 minutes. After that, turn off the gas and let it rest for 15 minutes.
Step 10: Final Serving
After 15 minutes, open the lid. You will see perfectly cooked basmati rice infused with the rich masala flavor. The koftas are soft and delicious. Garnish with coriander and mint leaves.
