Chicken Fry Recipe
Ingredients
For Marination
1) 1 kg chicken (with bones)
2) 1 tsp salt (or to taste)
3) 1/4 tsp turmeric powder
4) 2 tsp ginger-garlic paste
5) 1 lemon (juice)
For Dry Roasting
6) 1 tsp cumin seeds
7) 1 tbsp coriander seeds
8) 2-3 cloves
9) 5-6 small cardamoms
10 1/2 tsp black pepper
11) 2-3 cinnamon sticks
12) 3 dry red chilies
For Frying
13) 5-6 tbsp oil (or as per preference)
15) 2 medium-sized onions (thinly sliced)
For Cooking
16) 1/2 cup yogurt (well beaten)
17) 2-3 green chilies (finely chopped)
18) Fresh cilantro (handful, chopped)
19) 1 tsp Kashmiri red chili powder (for color)
20) 1/2 lemon (juice)
Let’s Start Recipe
Today, we will be making a very delicious, spicy, and tangy * Chicken Fry*. If you’re bored of making the same kind of chicken fry again and again, then you must try this recipe. Step 1: Marinate the Chicken
First, I have taken 1 kilogram of chicken with bones. After cleaning the chicken thoroughly, let’s marinate it. Add 1 teaspoon of salt (or to taste), 1/4 teaspoon of turmeric powder, 2 teaspoons of ginger-garlic paste, and the juice of 1 lemon. The lemon juice will make the chicken soft and juicy from the inside and it won’t turn hard while cooking.
Now, rub the spices well into the chicken and mix everything thoroughly. Let the chicken marinate for at least 1 hour in the fridge (not outside). If you have more time, you can marinate it for a longer period.
Step 2: Dry Roasting Whole Spices
Next, heat a pan on low flame. Add the following whole spices to dry roast:
1) 1 teaspoon cumin seeds
2) 1 tablespoon coriander seeds
3) 2-3 cloves
4) 5-6 small cardamoms
5) 1/2 teaspoon black pepper
6) 2-3 cinnamon sticks
7) 3 dry red chilies
Roast the spices for 1-2 minutes on low flame until they become slightly crispy and change color a little (but not too dark). Once done, transfer them to a plate to cool. After they cool down, grind them into a coarse powder and set it aside.
Step 3: Fry the Onions
In the same pan, add 5-6 tablespoons of oil. Once the oil heats up, add 2 medium-sized onions, thinly sliced. Fry the onions on medium-high flame, stirring constantly, until they become golden brown. Once the onions are golden brown, lower the heat and drain the oil using a spoon and transfer the onions to a plate. Set the fried onions aside for later use.

Step 4: Fry the Chicken
Now, using the same oil in the pan, add the marinated chicken pieces. Increase the heat to medium-high flame. Fry the chicken for 1-2 minutes on one side, allowing it to brown and cook well. After 2-3 minutes, flip the chicken pieces to the other side and cook for an additional 1-2 minutes until golden brown spots appear.
Continue frying the chicken for 5-7 minutes on medium-high flame, ensuring it is cooked well and the water has evaporated.
Step 5: Add Fried Onions and Yogurt
Once the chicken is fried, add the fried onions over it. Add any leftover chicken marinade water into the pan as well. Now, add 1/2 cup of well-beaten yogurt. Mix the yogurt thoroughly with the chicken and onions. After the yogurt is mixed, cook on medium-high flame until it starts to thicken.
Step 6: Simmer the Chicken
Now, cover the pan and cook the chicken on low flame for 15-20 minutes, or until the chicken becomes tender and fully cooked. After about 17-18 minutes, the chicken will be cooked through, and the extra water from the yogurt and chicken will evaporate, leaving a nice dry texture.
Step 7: Add Roasted Spices
At this point, add the coarsely ground roasted spices that were set aside earlier. Also, add 1 teaspoon of Kashmiri red chili powder for color. Mix everything well so that the spices coat the chicken properly. Cook the chicken on low to medium flame for another 2-3 minutes, allowing the spices to absorb into the chicken.
Step 8: Final Touch
Finally, add 2-3 finely chopped green chilies and a handful of fresh chopped cilantro. Mix everything well and cook for another minute or so. Before serving, squeeze half a lemon over the chicken to give it a tangy and flavorful kick.
Step 9: Serve and Enjoy
