Egg Bhurji Gravy Recipe

1) 3 boiled eggs

2) 1 tbsp oil (adjust according to preference)

3) 1 tsp cumin seeds (jeera)

4) 2 large onions, chopped

5) 1 tsp ginger-garlic paste

6) 2 large tomatoes, puréed

7) 1 tsp salt

8) 1/4 tsp turmeric powder

9) 1 tsp coriander powder

10) 1/4 tsp black pepper powder

11) 1 tsp Kashmiri red chili powder (for color)

12) 1 tsp crushed red chilies (optional)

13) Fresh coriander leaves (finely chopped)

14) 1/4 tsp garam masala powder

15)1-2 green chilies, finely chopped

Today, we are going to share a recipe that will make your lunch and dinner extra special. Yes, this is a very tasty recipe that can be prepared in just 10 minutes, and believe me, it’s really special and delicious! You can easily have it with **paratha**, and it’s really yummy.

Step 1: Boil and Slice Eggs

First, we take 3 boiled eggs. Slice each egg into 4 pieces, like shown in the video. Once done, set them aside.

Step 2 : Prepare the Masala

Heat a pan and add 1 tablespoon of oil. When the oil is hot, add 1 teaspoon of cumin seeds. Let them splutter, and then add 2 chopped onions. Sauté the onions on medium heat until they turn golden brown.

Step 3 : Add Ginger-Garlic Paste

Once the onions are golden, add 1 teaspoon of ginger-garlic paste. Cook until the raw smell disappears.

Step 4 : Add Tomatoes and Cook

Add 2 large puréed tomatoes to the pan. Mix well, and then add 1 teaspoon of salt to speed up the cooking process. Cook until the tomatoes become soft and the oil starts separating from the mixture.

Add Spices

1) 1/4 teaspoon turmeric powder

2) 1 teaspoon coriander powder

3) 1/4 teaspoon black pepper powder

4) 1 teaspoon Kashmiri red chili powder for color

Mix everything together and cook the spices well, allowing them to release their flavors. Don’t forget to cook the masala until the oil starts separating from it.

Step 5 : Prepare the Egg Mixture

In a separate bowl, crack 3 boiled eggs and add 1 teaspoon of crushed red chilies (optional), 1/4 teaspoon of salt, and a handful of finely chopped fresh coriander. Whisk the eggs well.

Step 6 : Add Water and Let it Boil

After the masala has cooked, add half a cup of water and mix. Let the gravy come to a boil.

Step 7 : Add Whisked Eggs to the Gravy

Once the gravy is boiling, pour the whisked eggs into the pan, spreading it evenly. Don’t stir immediately. Let the eggs cook and settle in the gravy. After 2-3 minutes, gently stir the eggs, breaking them into smaller pieces like minced meat.

Step 8 : Add the Sliced Boiled Eggs

Add the sliced boiled eggs to the pan. Stir gently and then sprinkle 1/4 teaspoon of garam masala powder. Add finely chopped green chilies and more fresh coriander as desired.

Step 9 : Let it Simmer

Cover the pan and let it cook on low heat for another 2-3 minutes to allow all the flavors to mix well.

Step 10 : Ready to Serve

After 2-3 minutes, turn off the gas. Your egg recipe is now ready to serve. You can enjoy this dish with **paratha**, or even **pav**. It’s an absolutely delicious and easy-to-make recipe that will be a hit at your meal table.
