19) Oil (for frying)

Today, we are going to make a very tasty and budget-friendly **Potato Egg Sticks** recipe. These are perfect for festivals , and you can easily prepare them. We are going to make **Egg and Potato Kebabs** which are super delicious! So, let’s start the recipe.

Step 1: Boil and Mash the Potatoes

First, I have boiled **4 medium-sized potatoes**. Now, we will **grate** the potatoes. You can also mash them using a potato masher or fork. Make sure there are no large chunks in the potatoes. Here, I have grated and mashed the potatoes.

Step 2: Grate the Boiled Eggs

Next, take **3 boiled eggs** and grate them using a grater. You can also finely chop the eggs if you prefer. I have grated the eggs like this.

Step 3: Add Vegetables and Seasoning

1) 1 medium-sized capsicum**, finely chopped

2) 1 medium-sized onion**, finely chopped

3) 2-3 tablespoons fresh coriander leaves**, finely chopped

4) 1 teaspoon salt (or according to taste)

5) 1 teaspoon chili flakes

6) 1/2 teaspoon black pepper powder

7) 1 teaspoon oregano** (or you can use mixed seasoning)

8) 1/2 teaspoon cumin powder**

9) 1/2 teaspoon chaat masala powder**

10) 2 green chilies**, finely chopped

11) 2-3 cubes processed cheese**, grated (you can use mozzarella or cheddar cheese as per your preference)

Now, mix all these ingredients well. To bind the mixture, I am adding **1/2 cup breadcrumbs** (you can also use fresh bread crumbs). This will absorb any moisture and help in binding.

Step 4: Shape the Sticks

Once all the ingredients are well combined, grease your hands with a little oil and take a small portion of the mixture. Shape it into a long roll (like a stick). If you prefer, you can insert **2 kebab sticks** into each roll, or you can make them without the sticks. Shape all the potato egg sticks in the same way.

Step 5: Coat the Sticks

For the coating, take **1/2 cup of flour** (you can also use **cornflour**), add **1/4 teaspoon salt** and **1/4 teaspoon chili flakes**. Mix the dry ingredients well. Gradually add water to make a **medium-thick batter**. Do not add all the water at once, as it may form lumps. Whisk the batter well to ensure there are no lumps. You want a smooth consistency, not too thick.

Now, take each potato stick and dip it into the batter. Use a spoon to cover the stick evenly with the batter. After that, roll the stick in **bread crumbs**, making sure it’s evenly coated. If you like, you can give them a double coating for extra crispiness. Repeat this for all the sticks.

Step 6: Freezing (Optional)

At this point, you can store these coated potato sticks in the freezer for **2-3 weeks**. They will be perfect for Festivals.

Step 7: Fry the Sticks

Heat **oil** in a pan on medium-high flame. Since these sticks are long, I am frying **2-3 sticks at a time**. As soon as the color starts changing, turn them around. Keep frying on medium-high flame. If the flame is too low or medium, they might split, so make sure to fry them on the right temperature.

The stuffing inside is already cooked, so we don’t need to cook them for long—just until they get a nice **golden-brown** color and become crispy.

Step 8: Final Steps

Once the sticks are perfectly fried, remove them from the pan and transfer them to a plate.

Step 9: Serve

These **Egg and Potato Sticks** are now ready! They are perfect for festivals or any other time you need a quick and delicious snack. The recipe is super easy, cost-effective, and tasty.

Thank You…♥️
