Egg Pakora Recipe
Ingredients
1) 6 boiled eggs
2) 2 medium-sized onions (sliced)
3) Fresh coriander (chopped)
4) 3-4 green chilies
5) 2 medium-sized raw potatoes (sliced and thinly cut)
6) 1 tbsp crushed whole coriander
7) 1 tsp crushed red chili
8) 1 tsp chaat masala powder
9) 1 tsp roasted cumin powder
10) 1 tsp red chili powder
11) ¼ tsp turmeric powder
12) 1 tsp carom seeds (ajwain)
13) ¾ tsp salt (or to taste)
14) ½ to ¾ cup gram flour
15) ¼ cup rice flour (or cornflour as an alternative)
16) A pinch of baking soda
17) 1-2 tbsp hot oil (for mixing)
18) Water (to make the batter)
19) Oil for frying

Today, we will prepare a very interesting, crispy, and tasty **Egg Pakora** recipe. It’s much easier to make than it looks, and it’s very delicious to eat. You can prepare it and serve it during Iftar or enjoy it with hot tea in the evening. Let’s quickly get started with the recipe!
Step 1: Preparing the Eggs
First, take 6 boiled eggs and cut them in half. Remove the yolks and set them aside (you can use these in other recipes). Then, cut the egg whites into 4 to 6 pieces, making sure they remain slightly whole to keep the texture intact. Transfer the egg whites to a plate and set aside.
Step 2: Preparing the Spicy Mixture
In a large mixing bowl, add the following ingredients:
1) 2 medium-sized sliced onions
2) Chopped coriander
3) 3-4 green chilies (finely chopped or ground)
4) 2 medium-sized raw potatoes (sliced and then finely cut)
Add these spices to the bowl:
1) 1 tbsp crushed coriander
2) 1 tsp crushed red chili
3)1 tsp chaat masala powder
4)1 tsp roasted cumin powder
5) 1 tsp red chili powder
6) ¼ tsp turmeric powder
7) 1 tsp carom seeds (ajwain)
8) ¾ tsp salt (adjust to taste)
Mash these ingredients well so that the spices mix properly with the onions and potatoes.
Step 3: Making the Batter
Next, add ½ to ¾ cup of gram flour and ¼ cup rice flour (or cornflour) to the mixture. The rice flour will make the pakoras extra crispy. Add a pinch of baking soda for additional crispiness. Mix the gram flour and spices without adding water initially, letting the moisture from the potatoes and onions bind the flour.
Now, add 1-2 tablespoons of water gradually to make a thick batter. Be careful not to add too much water, as it can make the batter soggy. Once the batter is well-mixed, add 1 tablespoon of hot oil. This will make the pakoras even crispier. Mix it well.

Step 4: Adding the Egg Whites
Gently add the cut egg whites into the batter. Mix carefully with light hands to avoid breaking the egg whites. The batter should coat the egg pieces without mashing them.
Step 5: Frying the Pakoras
Heat oil in a pan on medium-high flame. Once the oil is hot, reduce the flame to medium. Take a small portion of the batter and carefully shape it around each egg piece. Gently place the pakoras in the oil, ensuring they do not touch each other. Let them fry on medium heat for 1-2 minutes without touching them. This will help them hold their shape and become firm.
After 1-2 minutes, turn the pakoras over to cook the other side. Keep frying them on medium heat until they become golden brown and crispy. Avoid frying on very high heat, as this will burn the outer layer while keeping the inside raw. On the other hand, frying on very low heat will make them greasy and soggy.
Step 6: Draining Excess Oil
Once the pakoras are golden and crispy, take them out of the oil and place them on a strainer or paper towels to remove any excess oil. Repeat the process with the remaining pakoras.
Step 7: Serving the Egg Pakoras
Serve the egg pakoras hot with a side of mint chutney, tomato ketchup, or any sauce of your choice. These pakoras are crispy on the outside, soft and flavorful on the inside—perfect for a snack or starter!
