Aloo Paratha Recipe
Ingredients
For the Dough
1) 700g All-purpose flour (Maida)
2) 1 tsp Salt
3) 1 tsp Carom seeds (Ajwain)
4) 2-3 tsp Ghee (Clarified butter) or oil
5) Water (at room temperature)
For the Filling
6) 700g Boiled potatoes
7) 2 tsp Crushed coriander seeds
8) 1 tbsp Crushed black pepper
9) 1 tbsp Crushed cumin seeds
10) 1 tbsp Red chili powder
11) 1/4 tsp Turmeric powder
12) 1/2 tsp Garam masala powder
13) 1 tsp Amchur powder (Dry mango powder) or lemon juice
14) 1 tsp Chaat masala powder
15) 1 tsp Fennel seeds (Saunf)
16) 1 tbsp Kasuri methi (Dried fenugreek leaves) – roasted
17) 4-5 Green chilies – finely chopped
18 Fresh coriander leaves – a handful, chopped

Today, we are going to make a very delicious, crispy, and fluffy Aloo Paratha recipe. This recipe is a winter special, and it’s perfect for breakfast, lunch boxes, or even for a quick snack. You can serve these parathas with raita or pickle. Let’s get started with this easy recipe!
Step 1: Prepare the Dough
Start by taking 700 grams of all-purpose flour (maida). Sift the flour properly. If you prefer, you can use whole wheat flour (atta) instead. Add 1 teaspoon of salt (or to taste), and 1 teaspoon of carom seeds (ajwain) for digestion. Then, add 2-3 teaspoons of desi ghee (or oil if you prefer). Mix everything well by rubbing the ghee into the flour.
Now, add room temperature water little by little to knead the dough. Don’t use cold or hot water. Knead it into a soft, smooth dough. Soft dough is essential for making good parathas because it prevents them from tearing while stuffing. Knead the dough for about 4-5 minutes until it’s soft and smooth.
Step 2: Rest the Dough
Once the dough is ready, apply some oil on the surface and cover it with a cloth. Let it rest for 10-15 minutes. This helps the dough set and become even softer.
Step 3: Prepare the Stuffing
Take 700 grams of boiled potatoes. Make sure the potatoes are completely cooled down before mashing. You can either mash them by hand or grate them using a grater. Once mashed, add the following spices:
1 ) 2 teaspoons crushed coriander seeds
2) 1 tablespoon crushed black pepper
3) 1 tablespoon crushed cumin seeds
4) 1 teaspoon red chili powder (adjust according to spice preference)
5) 1/4 teaspoon turmeric powder
6) 1/2 teaspoon garam masala
7) 1 teaspoon fennel seeds (saunf)
8) 1 tablespoon kasuri methi (lightly roasted on a pan)
9) 4-5 finely chopped green chilies
10) 1 teaspoon amchur (dry mango powder) or lemon juice
11) 1 teaspoon chaat masala
Mix these spices well into the mashed potatoes. Make sure the potatoes are dry; they shouldn’t have any moisture left. Add freshly chopped coriander and mix again.
Step 4: Shape the Dough and Stuff the Parathas
After the dough has rested, knead it again for a minute. Now, divide the dough into medium-sized balls (pedas). Roll them into smooth balls, and dust with dry flour. Flatten each ball slightly with your hands and use a rolling pin to roll it into a small disc.
Now, take a good amount of the prepared potato stuffing and place it in the center of the dough disc. Fold the edges of the dough over the filling and seal it tightly by pinching the edges together. Press the stuffed dough ball gently with your palms to spread the filling evenly inside.
Step 5: Roll and Cook the Parathas
Dust the stuffed dough ball with a little dry flour and gently roll it into a medium-thick paratha. Be careful not to roll it too thin or too thick.
Heat a non-stick tawa on medium-high flame. Once the tawa is hot, place the rolled paratha on it. Cook the first side until you see light brown spots appearing. Flip the paratha and apply ghee or oil on the top side. Flip again and cook, pressing lightly to make it puff up like a balloon.
When both sides are golden and crispy, take the paratha off the tawa. Repeat this process for the remaining parathas.

Step 6: Serve
Serve the hot Aloo Parathas with raita, pickle, or even tomato ketchup for kids. These parathas are crispy, fluffy, and packed with flavor. They are perfect for a cozy winter breakfast or lunch.These parathas are incredibly delicious, and the aroma of ghee makes them even more special.
