Arabian Chicken Biriyani Recipe

Step 1: Preparing Chicken
We have used **1 whole chicken**, cut into **8 large pieces**. The chicken pieces should be large so that they cook evenly and remain juicy. You can opt for regular chicken cuts too. Wash the chicken thoroughly and set it aside.
Step 2: Soaking Rice
We’re using **3 cups of Basmati rice**, soaked in water for about **30 minutes**. This ensures that the rice cooks evenly and becomes fluffy.
Step 3: Cooking Spices
Now, in a large pot, add **½ cup of oil**. Once the oil is heated, add the following whole spices:
2 bay leaves
3-4 cinnamon sticks (each 1-inch)
½ tsp black peppercorns
6-7 cloves
6 green cardamoms
Sauté these spices for a few seconds to release their aromatic oils into the oil.
Step 4: Sautéing Onions
Next, add **2 large onions** (sliced). Fry them on medium heat for **2-3 minutes** until they soften and turn slightly golden. Once they are soft, add **2 tbsp ginger-garlic paste** and cook for a minute until the raw smell of the ginger and garlic disappears.
Step 5: Adding Chicken
Now, add the chicken pieces to the pan. Fry them on **high heat** for **3-4 minutes**. Stir the chicken continuously to ensure that it cooks evenly and seals in its juices.
Step 6: Adding Tomato Puree
Once the chicken is browned, add **2 large tomatoes** (pureed). We do not add any water at this stage. Let the tomatoes cook with the chicken on high heat until the water from the tomatoes evaporates. This will help enhance the flavor.
Step 7: Adding Spices
Now, add the following ground spices to the chicken and tomatoes:
1 tsp turmeric powder
2 tsp Kashmiri red chili powder (for color)
½ tsp black pepper powder
1 ½ tsp coriander powder
1 tsp roasted cumin powder
½ tsp garam masala**
Mix the spices thoroughly and cook for a couple of minutes until they release their aroma.
Step 8: Adding Additional Tomatoes
Now, add **3 medium-sized tomatoes** (diced). Add **1 ½ tsp salt** and mix well. Let this cook on **low heat** for **5 minutes** until the tomatoes soften and release their juices.
Step 9: Adding Water and Chicken Stock
Once the tomatoes are softened and mashed, add **1 cup of warm water** to the pot. This helps speed up the cooking process and ensures that the chicken remains tender. Let the mixture come to a boil on medium heat.
Simmer and cook the chicken for **12-15 minutes**, stirring occasionally. You can check if the chicken is done by cutting into a piece; it should be tender and fully cooked.
Step 10: Adding Rice
Now, drain the soaked rice and add it to the pot with the chicken and spices. Also, add **4-5 green chilies** (optional). If you don’t have thick green chilies, you can skip them. For the rice, we’ll use **1 ½ cups of water for every 1 cup of rice**, as we’ve already added some liquid from the chicken stock.
Add a bit more **salt** if necessary, as the water should taste slightly salty. Mix everything gently and bring it to a boil.

Step 11: Cooking the Rice
Once the water starts boiling, cover the pot and cook on **high heat** for **10 minutes** until the water reduces and the rice begins to cook. After that, reduce the flame to **low** and cover the pot again. Let it cook on low heat for another **8 minutes**.
Step 12: Final Step
After the final cooking time, turn off the gas and let the dish sit for **15 minutes** to allow the flavors to settle. When you open the lid, you’ll find perfectly cooked rice that’s aromatic and flavorful.
Step 11: Serving
