Step 1: Marinating the Chicken
Start by taking **1 kg chicken** (preferably leg pieces) and making **cuts** in them to allow the marinade to soak in.
For the marinade, use:
1) ½ tsp salt
2) ½ tsp turmeric powder
3) Juice of 1 lemon
Massage the marinade well into the chicken pieces and let it marinate for **10 minutes**.
Step 2: Preparing the Onion and Tomato Mixture
Meanwhile, prepare the following:
1) 2 large onions**, finely chopped
2) 3 medium tomatoes**, pureed in a blender
Now, heat a wide pan or wok on the gas, add **3-4 tbsp oil**, and let it heat. Once the oil is hot, add the chopped onions.
Fry the onions for about **2-3 minutes** until they soften and change color. Do not brown the onions too much.
Step 3: Frying the Chicken
Add the marinated chicken pieces to the pan.Set the gas flame to **high** and fry the chicken with the onions for about **4-5 minutes**. Stir the chicken well so that it cooks evenly on all sides.
After **6 minutes** The chicken should be lightly golden and fried well. Once done, remove the chicken pieces from the pan and set them aside.
Step 4: Preparing the Spices
In the same pan, add the following spices:
2 tsp red chili powder** (for color)
1 tbsp Kashmiri red chili powder** (for color and flavor)
2 tbsp chicken masala** (store-bought, available at any grocery store)
(You can use Everest or Goldie chicken masala, whichever is available)
2 tsp ginger paste
Mix everything well, and then add the pureed tomatoes.Add **½ tsp salt** (or adjust to taste).
The tomatoes will cook quickly. Stir the masala continuously, cooking until the oil starts separating from the mixture.

Step 5: Cooking the Chicken in Spices
Add the **fried chicken** back into the pan, and mix the chicken with the masala thoroughly.
Add the following
½ cup finely chopped coriander leaves
Mix the chicken with the coriander leaves on **high flame** to get the best flavor.
Once mixed, add **1 glass of water** and another **1 glass of water** (for more gravy). Stir everything well.
Cover the pan and let the chicken cook for **20-25 minutes** on medium flame.
Step 6: Final Cooking and Adjusting the Gravy
After **20-25 minutes**The chicken should be cooked, and the gravy will thicken. You can adjust the consistency of the gravy by adding water, depending on how much you want.Once done, cover the pan again and let it rest for **10 minutes** for the flavors to settle.
