Chicken Tikka Gravy Recipe
Ingredients
FOR CHICKEN MARINATION :-
1Kg chicken
2 tsp ginger garlic paste
1 lemon juice
1½ tsp salt
150grm curd
*1 tbsp coriander powder
*1 tbsp kashmiri red chilli powder
**1 tsp pepper powder
1 tbsp cumin powder
1 tsp garam masala
½ tsp turmeric powder
¼ tsp food colour
Coal For smokey flavour
FOR TIKKA MASALA GRAVY :-
1 tsp cumin
7-8 peppercorns
4 green cardamom
2-3 cinnamon sticks
4 dry red chillies
2 large sized onions
2 tsp ginger garlic paste
200grm Tomato puree
1 tsp salt
½ tsp turmeric powder
2 tsp turmeric powder
2 tsp kashmiri red chilli powder
1 tsp pepper powder
1 tbsp cumin powder
5-6 green chillies
1 tbsp dry Fenugreek leaves
½ tsp garam masala
½ cup fresh cream
coriander for garnishing
oil for cooking

Step 1: Preparing the Chicken
For this recipe, we’re using **bone-in chicken** (you can also use boneless chicken, thighs, or breasts). First, wash the chicken pieces thoroughly and place them in a strainer to remove any excess water. For larger pieces, make shallow cuts to allow the marinade to seep in.
Step 2: Marinating the Chicken
To marinate, add the following ingredients to the chicken:
2 teaspoons ginger-garlic paste
Juice of 1 large lemon
1½ teaspoons salt
150 grams yogurt
*1 tablespoon coriander powder
*1 tablespoon Kashmiri red chili powder
**1 teaspoon black pepper powder
1 tablespoon roasted cumin powder
1 teaspoon garam masala
½ teaspoon turmeric powder
¼ teaspoon orange food color** (optional)
Mix all the ingredients well into the chicken. Let it marinate for at least **30 minutes**, but for best results, marinate for **1-2 hours** or even **overnight**.
Step 3: Cooking the Chicken
Heat **2-3 tablespoons of oil** in a pan. Once the oil is hot, add the marinated chicken pieces, making sure not to overcrowd the pan. Cook the chicken on **high flame** for a few minutes, then reduce the flame to **medium** to ensure the chicken cooks evenly while getting a nice char. Flip the pieces and cook for about **12-13 minutes** until the chicken is fully cooked.
If there’s excess water, raise the flame to high and stir the chicken to make sure the masala sticks well to the pieces. After **2-3 minutes**, remove the chicken from the pan.
Step 4: Preparing the Smoke
Once the chicken is cooked, place a small bowl in the center of the chicken and add a **piece of coal**. Drizzle a little oil on top and cover the pan for 2-3 minutes to infuse the chicken with smoky flavor.
Step 5: Preparing the Gravy
For the gravy, heat **2 tablespoons of oil** in a separate pan. Once hot, add:
4 green cardamoms
7-8 black peppercorns
3-4 small cinnamon sticks
1 teaspoon cumin seeds
4 dried red chilies** (or long red chilies if you don’t have whole ones)
Let them fry briefly, then add **2 finely chopped onions**. Sauté the onions for **3 minutes** until they soften and turn light brown
Step 6: Adding Ginger-Garlic Paste
Add **2 teaspoons ginger-garlic paste** to the pan and cook until the raw smell disappears. Now, add **200 grams of pureed tomatoes** (about 4 medium-sized tomatoes). Let the tomatoes cook until the oil separates from the mixture
Step 7: Cooking the Gravy Spices
Add the following ground spices:
½ teaspoon turmeric powder
2 teaspoons coriander powder
2 teaspoons Kashmiri red chili powder
1 teaspoon black pepper powder
1 tablespoon roasted cumin powder
Cook the spices until they begin to separate from the oil. Then, add **½ teaspoon salt** (adjust to taste). Stir well and cover to cook for a few minutes.
Step 8: Mixing in the Chicken
೦nce the tomatoes are cooked and the oil separates, add the **marinated chicken pieces** into the gravy. Mix well and cook for **12-15 minutes** on **medium heat** to let the flavors combine.
Step 9: Final Touches
Add **1 tablespoon crushed kasuri methi** (dried fenugreek leaves) and **½ teaspoon garam masala**. Stir well. To enhance the richness, add **½ cup fresh cream** and mix until smooth.

Step 10: Simmer and Serve
Let the gravy simmer for **2-3 minutes** on low flame, allowing the oil to rise to the surface and the cream to blend into the sauce. Turn off the heat.
