Chicken Tikka Recipe
Ingredients
1) 1kg Chicken
2) 1½ tsp salt
3) 1 tbsp crushed ginger & garlic
4) 2 medium sized tomatoes
5) 2 medium sized onions
6) 2 green chillies chopped
7) ½ tsp garam masala
8) chopped coriander
9) 3-4 green chillies (slit cut)

13) 1 tsp cumin
14) 3-4 dry red chillies

Step 1: Preparing the Chicken
Start by taking **1 kg chicken**. Make cuts in the thick pieces of the chicken to allow the marinade to penetrate. This will help the flavors get in. Now, let’s begin cooking.
Step 2: Frying the Chicken
Heat **½ cup oil** in a pan. You can adjust the amount of oil as per your preference. Once the oil is hot, add the chicken pieces one by one. Make sure not to overcrowd the pan.Add **1 teaspoon salt** at this stage (we’ll add more later). Fry the chicken on **high flame** until you see **light grill marks**.
Don’t stack the pieces on top of each other. After a few minutes, flip the chicken pieces to the other side and fry until you get those nice marks.
Step 3: Adding Ginger, Garlic, and Spices
Once the chicken pieces are fried, add **1 tablespoon crushed ginger-garlic paste** and **2 chopped green chilies**. Fry for a minute until the ginger-garlic releases its aroma.Now, add **2 medium-sized onions**, finely sliced, and **break them up with your hands** as you add them to the pan. Cook on medium heat.
Step 4: Adding Tomatoes
Now, add **2 medium-sized tomatoes**, sliced. Stir the mixture and cover it for about **5 minutes**. Let it cook together and release its flavors.
Step 5: Preparing the Spice Mix
While the chicken is cooking, let’s prepare the spice mix. In a separate pan, dry roast the following ingredients on low heat:
1) 2 teaspoons coriander seeds
2) 1 tablespoon black pepper
3) 1 teaspoon cumin seeds
4) 4 dried red chilies (increase if you like it spicy)
Roast these gently to release the flavors, but avoid burning them. Once roasted, let them cool and then grind them into a **coarse powder** (don’t make it too fine).
Step 6: Adding the Spice Mix
After the chicken has cooked with the onions and tomatoes for about 5 minutes, add the freshly ground spice mix. Add **½ teaspoon salt** to taste. Stir well, and the smell will already start to make your mouth water!
Step 7: Adding Water
Add about **3-4 tablespoons of water** (not too much) and stir the mixture well. Let it cook for **15 minutes** on medium flame. Stir once or twice during the cooking time.

Step 8: Final Steps
After **15 minutes**, open the lid and check. The water should have mostly evaporated. Stir the chicken well.
Now, add **3-4 slit green chilies** and **½ teaspoon garam masala**. Add freshly chopped **coriander leaves** and mix everything together.
Cover and cook for **2 more minutes on high heat**. This will allow the masala to fully coat the chicken and intensify the flavor.
