Masala Chicken Pulao
Ingredients:
500grm chicken
400grm basmati rice
2 large sized onions
2 tsp ginger garlic paste
1 black Cardamom
2 cinnamon stick
10-12 peppercorns
2 green cardamom
3-4 cloves
1 tsp cumin
3 medium sized Tomatoes
1½ tsp salt
½ tsp pepper powder
½ tsp garam masala
1 tsp red chilli powder
3 tbsp curd (mixed with 2 tbsp water)
5-6 green chillies
2 spoonful of oil
1 tbsp clarified butter

🔪 Step-by-Step Cooking:
1)Start with the Chicken
Heat **oil and ghee** in a pressure cooker.* Add sliced **onions** and fry until golden brown — just like you would for a *korma*.* Once brown, add **chicken** and sauté until it changes color and cooks slightly.
2)Add Whole Spices
Add all the listed **whole spices** and **ginger-garlic paste**.* Sauté well to coat the chicken with the flavors.
3)Add Tomatoes & Ground Spices
Add **chopped tomatoes** and **salt**.* Add **black pepper**, **garam masala**, and **red chili powder**.* Mix everything well and **cover the cooker** for **5 minutes** to soften the tomatoes and allow the chicken to cook.
4) Add Yogurt
Lower the flame, add **well-beaten yogurt**, then increase the heat.* Sauté until the oil starts separating from the masala.
5) Add Water
Pour in **3 cups of water** (since it’s a pressure cooker, we use less water).* Add **whole green chilies** for flavor.* Bring it to a boil.
6) Add Rice
* Drain the soaked rice and add it in.* Mix gently — avoid breaking the grains.* Taste the water and adjust **salt** if needed
7) Cook Under Pressure
* Once the water level drops slightly (after 5–6 mins of boiling), gently stir the rice.* Now put the **lid on the pressure cooker**.* Keep the flame on **medium**, let **1 whistle** come.* Then turn off the flame and let the **pressure release naturally**.

8) Fluff & Serve
Once the pressure releases, **do not stir immediately**.* Use a **fork** to gently fluff up the rice — this keeps the grains separate and soft.
