Spinach Paratha Recipe
Ingredients
1) 2.5 cups wheat flour (you can substitute with all-purpose flour if preferred)
2) 2-3 tablespoons gram flour (for crispiness)
3) ½ teaspoon celery
4) 1 teaspoon whole cumin seeds
5) 1 teaspoon salt (adjust to taste)
6) 1 teaspoon red chili flakes
7) 1-inch piece of ginger, coarsely ground
8) 5 green chilies, coarsely ground (or finely chopped)
9) 1 bunch of spinach, washed and chopped
10) 2 tablespoons desi ghee (you can use oil instead)
11) Water (to knead the dough)

Today, we will make a very tasty and healthy recipe for **Spinach Paratha**. You can make it for breakfast, pack it in a lunch box for your children along with curd raita, or serve it with tomato ketchup. It’s a very easy recipe and a very healthy paratha. Let’s make it quickly!
Step 1: Preparing the Flour Mix
In a large pan, add 2.5 cups of wheat flour. You can also use all-purpose flour. Add 2-3 tablespoons of gram flour, which will make the parathas crispy and tasty.
Then, add:
1) ½ teaspoon celery
2) 1 teaspoon whole cumin seeds
3) 1 teaspoon salt
4) 1 teaspoon red chili flakes
5) 1-inch piece of coarsely ground ginger
6) 5 green chilies, coarsely ground (or finely chopped)
Step 2: Adding Spinach to the Dough
Wash and chop the spinach thoroughly. After draining all the water, cut the spinach into small pieces. Add spinach little by little to the flour mixture. Don’t add it all at once since spinach releases water, and we don’t want to make the dough too wet. Keep mixing the spinach well with the flour.
Step 3: Kneading the Dough
Now, add 2 tablespoons of desi ghee (or oil) to the flour mix. Ghee will make the parathas crispy. Mix it well with the flour. Add water gradually and knead into a dough. The dough should be firm, as spinach will release water later. Don’t add too much water initially. After kneading for about 4-5 minutes, the dough should be soft. Add 1 tablespoon of oil, mix it well, and knead it for another minute.
Step 4: Resting the Dough
Cover the dough and let it rest for 10-15 minutes. This will allow the dough to become soft and smooth. After 15 minutes, the dough should be ready.

Step 5: Rolling the Paratha
Take a small portion of the dough and shape it into a ball (peda). Roll it out on a surface dusted with dry flour to prevent sticking. Roll it thin and round. Apply some ghee on top, or you can use butter or oil. Sprinkle some dry flour and fold the dough from both sides to create a square shape. Roll it out again into a square.
Step 6: Cooking the Paratha
Heat a pan on medium-high flame. Place the rolled-out paratha on the pan and let it cook for a few minutes until it starts to dry on one side. Flip it over and cook the other side. Apply some ghee or oil to both sides as it cooks. Keep cooking on medium flame until the paratha gets golden brown spots on both sides.
Step 7: Serving the Spinach Paratha
Once cooked, serve the paratha hot. If you have more parathas to cook, follow the same process. This is a quick and easy recipe, perfect for lunch, dinner, or a lunch box for children.
