Sweet Vermicelli Recipe
Ingredients
Desi Ghee – 2 tablespoons
Vermicelli** (unroasted) – 2 cups
Cashews – A handful
Almonds – A handful
Raisins – A handful
Water – 2 cups
Green Cardamoms – 5 to 6, crushed (or cardamom powder)
Sugar – 3/4 cup (adjust to taste)
Crushed Red Chilies – 1 teaspoon (optional, for mild spice)
Roasted Cumin Powder– 1/2 teaspoon
Chaat Masala – 1/2 teaspoon
Black Pepper Powder – 1/2 teaspoon
Tomato Ketchup – 1 tablespoon
Mayonnaise – 1 tablespoon
Lemon Juice – 1/2 lemon (or 1 tablespoon white vinegar)
Let’s Start Recipe
Today, we are going to prepare a very interesting and quick Sweet Vermicelli recipe that can be made in just 10 to 15 minutes. It’s simple to prepare and tastes even better than it is easy to make. This sweet vermicelli is a perfect dessert for any occasion and can be enjoyed by everyone. Let’s quickly dive into the recipe!
Step 1: Roasting the Vermicelli
First, take a pan and add 1 tablespoon of desi ghee. Heat the ghee well and melt it. Once the ghee is hot, add 2 cups of thick, unroasted vermicelli (you can use roasted vermicelli if you prefer). Stir the vermicelli continuously while frying it on low flame. Avoid frying on high flame as it may burn the vermicelli or cook unevenly. Stir and roast the vermicelli until it turns golden brown, which should take about 5 to 6 minutes.
Once it’s perfectly roasted, turn off the gas flame and set the vermicelli aside in a plate to prevent it from getting darker.
Step 2: Frying the Dry Fruits
In the same pan, add another tablespoon of ghee and melt it well. Now, add dry fruits to the ghee. I have taken cashews, almonds, and raisins. First, fry the cashews and almonds on low flame for 1 to 1.5 minutes. Once they’re fried, add the raisins and fry them until they swell up (this will take about 1 minute). After frying, remove the dry fruits from the pan and set them aside for later.
Step 3: Boiling the Water and Cooking Vermicelli
In the same pan, add 2 cups of water (the same amount as the vermicelli). Bring the water to a boil over high flame. Once it starts boiling, add 5 to 6 crushed green cardamoms (or cardamom powder if preferred). When the water is boiling well, add the roasted vermicelli to the pan and reduce the flame to medium.
Mix the vermicelli well in the water, cover the pan, and cook on low to medium flame until the water is completely absorbed. The vermicelli will cook and become soft, and the water will dry up completely.
Step 4: Adding Sugar and Dry Fruits
Once the water is dried up and the vermicelli is soft, add 3/4 cup of sugar (or adjust to your taste). Stir the sugar well into the vermicelli. As the sugar melts, it will make the vermicelli a bit liquid again. Continue cooking on medium flame until the mixture thickens again.
After the sugar has dissolved and the consistency is perfect, add the fried dry fruits to the vermicelli and mix them in well. Your sweet vermicelli is now ready.

Step 5: Letting the Vermicelli Settle
Turn off the gas flame and cover the pan for 2 minutes. This will allow the flavors to meld. After 2 minutes, uncover the pan and stir the vermicelli well. It may appear a little sticky at first, but once you stir it, it will soften up beautifully.
Step 6: Serving the Sweet Vermicelli
