Tandoori Chicken Recipe
Ingrediants
FOR CHICKEN MARINATION
1kg chicken
1 tbsp salt
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp crushed red chillies
*½ tbsp garam masala
*½ tsp carom seeds
½ roasted & crushed cumin
½ tsp garlic powder
2 lemon juice
¼ tsp food colour
1 tbsp soy sauce
2 tbsp red chilli sauce
2 tbsp mustard oil
oil and butter for cooking
Step 1: Introduction

Step 2: Preparing the Chicken
Start with 1 kg of chicken, preferably legs and thighs. Wash the chicken properly and drain out the excess water. Place the chicken on a plate.
Now, we’re going to marinate the chicken. Add the following ingredients:
1 tablespoon salt
1 teaspoon red chili powder
½ teaspoon turmeric powder
1 teaspoon crushed red chili
*½ tablespoon garam masala
*½ teaspoon ajwain (carom seeds)
(½ teaspoon roasted cumin powder
½ teaspoon garlic powder (or 1 tablespoon ginger-garlic paste if you prefer)
1 tablespoon coriander powder
Juice of 2 lemons
1 teaspoon orange food color
1 tablespoon soy sauce
2 tablespoons red chili sauce
2 tablespoons mustard oil
½ cup yogurt
Mix everything thoroughly and coat the chicken well with the marinade. Make sure to fill the marinade into the cuts of the chicken. Let it marinate for at least 2 hours. If you are in a hurry, you can cook it immediately, but marinating for longer enhances the flavor.
Step 3: Cooking the Chicken
After marinating, heat a pan on medium heat. Add 1 tablespoon vegetable oil and 1 tablespoon butter. If you prefer, you can skip the butter and use more oil. Grease the pan well with the oil and butter mixture.Place each piece of chicken in the pan and add the remaining marinade over it. Add a little water (about ¼ cup) to help the marinade spread. Let the chicken cook on medium-low heat for about 15-20 minutes. Check and flip the chicken occasionally to ensure it cooks evenly.
Step 4: Preparing the Sauce
While the chicken is cooking, let’s make the chutney to go along with it. For the chutney, take:
2 green chilies chopped
3 cloves of garlic
4-5 tablespoons yogurt
½ teaspoon cumin powder
½ teaspoon black salt
A handful of fresh coriander leaves
¼ cup water
Grind everything together into a smooth paste. Set it aside in a bowl.
Step 5: Finalizing the Chicken
After 20 minutes, you’ll see that the chicken is cooking well and the color is changing. Flip the chicken again and cook it further. Once the chicken is cooked, increase the flame to high. Coat the chicken with the cooked masala mixture and let it dry out. The masala will stick to the chicken and give it a perfect finish.

Step 6: Adding Smoky Flavor
Once the chicken is cooked and well-coated with the spices, turn off the heat. To give the chicken a smoky flavor, you can use coal. Simply heat a piece of coal on the stove until it’s red hot. Place it in a small bowl and put it in the pan with the chicken. Pour a little oil over the coal to generate smoke. Cover the pan to trap the smoke and let the chicken absorb the smoky flavor.
If you don’t have coal, you can achieve a similar effect by holding the chicken over the gas flame with tongs to add a smoky flavor.
Step 7: Serving the Tandoori Chicken
Once the chicken has absorbed the smoky flavor, it’s ready to serve! The chicken is juicy, tender, and perfectly cooked. It looks and tastes just like the ones from the market, but even better. Serve this Tandoori Chicken at your next party, or Any celebration, or family gathering. It’s a sure hit!
