Tawa Fish Fry Recipe
Ingredients
1 ) 1 kg fish (cleaned and dried)
2) 2 teaspoons ginger-garlic paste
3) 1/2 teaspoon turmeric powder
4) 1/2 teaspoon roasted cumin powder
5) 1 teaspoon black pepper powder
6) 1 teaspoon carom seeds (ajwain)
7) 1 teaspoon salt (or to taste)
8) 2 teaspoons red chili powder (adjust to taste)
9) 1 teaspoon coriander powder
10) 1 teaspoon garam masala powder
11) Juice of 2 large lemons (around 3 tablespoons)
12) 3-4 green chilies (coarsely crushed)
13) 2 tablespoons cornflour (or rice flour/besan)
14) 12-15 curry leaves (finely chopped)
15) A pinch of orange-red food color (optional)

Today, we are going to make a very **crispy, spicy, and flavorful** **Tawa Fish Fry** recipe. It’s incredibly easy to make, and you can prepare it in no time. You can serve it with **green chutney**, **onion rings**, or even with **dal and rice**. It’s absolutely delicious and easy to make. Let’s quickly get started with the recipe.
Step 1: Clean and Dry the Fish
First, I have taken **1 kg of fish** (any fish of your choice), cleaned it thoroughly, and dried it well. The fish should not have any water left. After washing it, place the fish in a **strainer** for about **half an hour** to drain any excess water.
Step 2: Prepare the Marinade
Now, we will prepare the marinade with the following ingredients:
1) 2 teaspoons ginger-garlic paste**
2) 1/2 teaspoon turmeric powder**
3) 1/2 teaspoon roasted cumin powder**
4) 1 teaspoon black pepper powder**
5) 1 teaspoon carom seeds (ajwain)** (this is great for digestion)
6) 1 teaspoon salt** (or according to taste)
7) 2 teaspoons red chili powder** (adjust to taste)
8) 1 teaspoon coriander powder**
9) 1 teaspoon garam masala powder**
10) Juice of 2 large lemons** (around 3 tablespoons)
11) 3-4 green chilies**, coarsely crushed (you can adjust the quantity based on your spice preference)
12) 2 tablespoons cornflour** (you can also use rice flour or gram flour)
13) 12-15 curry leaves**, finely chopped
14) A pinch of orange-red food color** (optional, just for color)
Mix all these ingredients well to form a smooth marinade. Then, apply the marinade generously over the fish pieces, rubbing it into the fish so that it absorbs all the flavors. After marinating, cover the fish and refrigerate it for **2 hours**.

Step 3: Heat Oil and Fry the Fish
Now, heat **4-5 tablespoons of oil** in a **cast iron tawa** (you can also use a non-stick pan). Once the oil is hot, gently place the marinated fish pieces into the oil. Keep the gas on **low-medium heat**. Fry each side of the fish for about **3-4 minutes** until it turns golden brown and crispy.
It’s important not to cook the fish for too long since it cooks quickly. The total frying time should be **7-8 minutes**. Fry all the fish pieces in batches if needed. Once done, transfer the fish to the side of the tawa so any excess oil can drain off, keeping the fish crispy. The fish will remain hot for a long time as the tawa retains heat.
Step 4: Serve and Enjoy
Once all the fish pieces are fried, serve them hot with **green chutney**, **onion rings**, or **dal and rice**. This fish fry is **crispy, spicy**, and **full of flavor**. It’s perfect for winter days, but you can enjoy it any time.
