Walnut Date Cake Recipe

1) 10 soft dates** (pitted)

2) ½ cup jaggery, chopped

3) ½ cup milk (room temperature)

4) ¼ cup vegetable oil

5) 1 cup whole wheat flour

6) 4 tablespoons milk powder (optional)

7) 1 teaspoon baking powder

8) ¼ teaspoon baking soda

9) ¼ teaspoon salt

10) 2 tablespoons water (adjust as needed)

11) 1/3 cup finely chopped walnuts

12) 1 teaspoon vinegar

13) 1 teaspoon vanilla extract (optional)

Today, we’re going to make a delicious **Walnut Date Cake**. This cake is super tasty and comes out so soft and spongy! We’ve made this cake without any eggs, without a mixer, and without an oven. Step 1: Prepare the Date and Sugar Mixture

10 soft dates (with the pits removed)

½ cup jaggery, cut into small pieces

½ cup milk (room temperature)

Blend these ingredients into a **smooth paste**. Ensure there are no lumps and the mixture is well-blended.

Step 2: Mix the Wet Ingredients

¼ cup vegetable oil** (you can use any type of vegetable oil)

Mix everything together well using a whisk.

Step 3: Prepare the Dry Ingredients

1 cup wheat flour (whole wheat)

4 tablespoons milk powder (optional, but adds great taste to the cake)

1 teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

Sifting helps in evenly mixing the ingredients and gives a soft cake texture. Mix these dry ingredients well and sift them into the wet mixture.

Step 4: Combine Wet and Dry Ingredients

Now, add the sifted dry ingredients to the wet mixture and mix gently. Don’t make the batter too runny. We want the batter to be smooth and slightly thick.

Add **2 tablespoons of water** gradually and mix carefully. The batter should have a **thick consistency**. Don’t make it too thin, as the cake will not rise properly.

Step 5: Add the Walnuts

Add **1/3 cup finely chopped walnuts** to the batter and mix them in gently. Make sure that the walnuts don’t sink to the bottom, so the batter should not be too thin.

Step 6: Prepare the Cake Pan

Transfer the batter into a **6-inch cake pan** that has been lined with **parchment paper**. If you don’t have parchment paper, you can dust the pan with a little flour. Tap the pan gently a few times to release any air bubbles trapped in the batter.

Step 7: Preheat the Pot

Heat a **pot** over low flame for about 10 minutes to preheat it. Place a stand inside the pot. Once the pot is ready, place the cake pan on top of the stand.

Step 8: Bake the Cake

Cover the pot and bake the cake for **40–45 minutes** over low to medium flame. You can check the cake after 40 minutes by inserting a toothpick into the center. If the toothpick comes out clean, the cake is done. If the batter sticks to the toothpick, bake for an additional **5-10 minutes**.

Step 9: Let the Cake Cool

Once the cake is done, let it cool completely before removing it from the pan. When the cake has cooled, **demold** it from the pan.

Step 10: Serving the Cake

Cut the cake and enjoy! It’s incredibly **soft, spongy, and delicious**. Since we made it without any eggs and sugar, it’s also a healthier option. This cake is perfect for winter and can be enjoyed with tea or as a light snack.
