Cauliflower Curry Recipe
Ingredients
1) 400grm cauliflower (250grm after cutting)
2)¼ tsp turmeric powder
3) ½ tsp salt
For Gravy
4) ½ tsp cumin
5) 1 medium sized onion
6) 1 inch piece of ginger + 2 green chillies + 5-6 garlic buds (crush these coarsely)
7) 2 large sized tomato puree
8) 1 tsp salt
9) ¼ tsp turmeric powder
10) 1 tsp red chilli powder
11) 1 tsp coriander powder
12) ½ tsp cumin powder
13) ¼ tsp garam masala
14) ½ tsp dry Fenugreek leaves
15) Some chopped coriander
16) 2 tbsp mustard oil

Step 1: Preparing the Cauliflower
First, take **400g cauliflower** (after removing the stalks and cutting it) which should weigh around **250g** after preparation. Wash it thoroughly.Next, boil some **water** in a pan, and once it starts boiling, add **¼ tsp turmeric powder** and **½ tsp salt**. As soon as the water boils, add the cauliflower to it. Let it boil for **2-3 minutes**. After boiling, strain the cauliflower using a **strainer** and set it aside.
Step 2: Preparing the Base
Now, heat **2 tbsp oil** in a pan (we are using **mustard oil** for extra flavor). If you’re not familiar with cooking in mustard oil, you can check our **video guide** in the description to learn how to heat mustard oil properly.Once the oil is hot, add **½ tsp cumin seeds**. Once they start to splutter, add **1 medium-sized onion**, finely chopped.Fry the onion for **5-6 minutes** until it becomes soft and its color changes slightly.
Step 3: Adding Ginger, Garlic, and Green Chilies
Add **1-inch ginger**, **2 green chilies**, and **5-6 garlic cloves** (crushed or finely chopped).Sauté for a few more minutes, until the raw smell of ginger and garlic disappears.
Step 4: Adding Tomatoes and Spices
Now, add **2 large tomatoes** (pureed) to the pan. To speed up the cooking process, add **1 tsp salt** to the tomatoes.Cook the tomatoes for **4-5 minutes** until they become soft and the oil starts separating.
Next, add the following powdered spices:
1) ¼ tsp turmeric powder
2) 1 tsp red chili powder
3) 1 tsp coriander powder
4) ½ tsp roasted cumin powder
5) 1 tsp garam masala
Mix well and cook for **1-2 minutes**. After that, add **3-4 tbsp water** to help in cooking the spices and make the base smoother. Let the masala cook until the oil begins to separate from the masala.
Step 5: Cooking the Cauliflower
Now, add the **boiled cauliflower** into the pan and mix everything well.
Add **½ cup water** to create a nice gravy. Reduce the heat to **medium-low** and let it cook for **5-6 minutes** until the cauliflower becomes soft and fully cooked.
If necessary, check and stir the curry in between.

Step 6: Finishing Touches
Once the cauliflower is cooked and the oil starts to separate from the curry, add freshly chopped **coriander leaves** for extra flavor. Mix everything well, cover the pan, and leave it on low heat for **2 more minutes**.After 2 minutes, turn off the heat.
Step 7: Final Garnish
Before serving, add **½ tsp kasuri methi** (crushed) for a unique flavor.You can also sprinkle a little bit of **coriander leaves** on top for a fresh, vibrant finish.
