Let’s Start Recipe
we’re making a **crispy, spicy, and tangy Chicken Tandoori Samosa** recipe that will leave everyone craving for more. Perfect for a **hot evening with tea** or you can store them in your **deep freezer** for up to a month. Let’s get started!
Step 1: Preparing the Chicken**
In a pan, heat **2 tablespoons of oil**. Once the oil is hot, add **1 tablespoon finely chopped garlic**. Fry the garlic on **low flame** for a few seconds to release its flavor. Once the garlic is fried, add **500 grams boneless chicken**, cut into small pieces. Stir well and cook on **medium-high flame** until the chicken turns white and cooked through.
Step 2: Adding Spices
Once the chicken changes color, **lower the flame** and add the following spices:
* **1 teaspoon red chili powder** (or to taste)*
**1 tablespoon chili flakes** (optional)
* **1 tablespoon coriander powder***
**1 teaspoon roasted cumin powder***
**1 tablespoon tandoori masala**
Mix all the spices well, ensuring they coat the chicken. Allow the spices to cook on **low flame** for a minute until the rawness disappears.
Step 3: Adding Yogurt
Add **2 tablespoons yogurt** and mix it in thoroughly. Cook the chicken with yogurt and spices for about **1 minute**. Cover and let it cook on **low flame** for **8-10 minutes**. This will ensure the chicken is well-cooked and tender in its own juices
Step 4: Adding Onions
After 10 minutes, when the chicken is soft and tender, add **2 medium-sized finely chopped onions**. Stir and cook the onions for **3-4 minutes** on low flame until they soften. Do not overcook the onions, just let them shrink and soften a little. Once done, turn off the gas.
Step 5: Adding Smoky Flavor
To give the chicken a **smoky tandoori flavor**, place **a piece of hot coal** in the center of the chicken. Add a little **oil on top** of the coal and cover it for **2-3 minutes** to infuse the smoky flavor. Be careful not to let the smoke last too long as it could make the chicken bitter.
Step 6: Cooling and Adding Fresh Coriander
Once the smoky flavor has been infused, mix the chicken well. Set it aside and allow it to cool completely. After it has cooled, add a handful of freshly chopped **green coriander**. Mixing this in after the chicken cools keeps the coriander vibrant and green.
Step 7: Storing the Filling
Transfer the cooled chicken stuffing to a large mixing bowl. You can store this stuffing in the **fridge for 2-3 days** if you’re not ready to make the samosas right away. Alternatively, freeze it for up to a month.
Step 8: Preparing the Samosa Sheets
Now, take ready-made samosa sheets (easily available in the market) or you can make them at home. To assemble the samosas:
* **Take one sheet** and apply a little **flour paste** (made by mixing water and flour) on one side of the sheet.
* **Fold the sheet** into a triangle and seal the edges, leaving a pocket for stuffing.* **Fill the pocket** with about **1 to 1.5 tablespoons of chicken stuffing**.
Be careful not to overfill, as it will make sealing the samosa difficult. Seal the edges well using the flour paste to prevent the stuffing from spilling while frying.

Step 9: Frying the Samosas
Heat oil in a **medium flame** for frying. Fry the samosas on low to medium flame to ensure they cook evenly. High flame can make the outer layer dark while keeping the inside raw.
Turn the samosas occasionally so they turn golden brown on all sides. Once they are perfectly golden and crispy, remove them from the oil. Place them on **absorbent paper** to remove excess oil.
Step 10: Serving
Now, your **crispy, spicy, and flavorful Chicken Tandoori Samosas** are ready! Serve them hot with **tea** in the evening or enjoy them as a snack. You can also store them in the **freezer** for later use.
