Egg Noodles Recipe

1) 3 liters water (for boiling noodles)

2) 1 tablespoon salt (for boiling noodles)

3) 1 tablespoon oil (for boiling noodles)

4) 450 grams noodles

5) 2 tablespoons oil (for frying eggs)

6) 4 eggs

7) 1 pinch salt (for eggs)8) 2-3 tablespoons oil (for stir-frying veggies)

9) 1-inch piece ginger (finely chopped)

10) 10-15 garlic cloves (finely chopped)

11) 7-8 green chilies (adjust to taste)

12) 1 large onion (cut into thin strips)

13) ½ cup carrots (julienned)

14) 1 bell pepper (capsicum)

15) ½ cup cabbage (shredded)

16) 1 tablespoon Schezwan sauce (optional)

17) 1 tablespoon dark soy sauce

18) 1 tablespoon white vinegar

19) 1 tablespoon red chili sauce

20) 1-1.5 tablespoons tomato ketchup

21) ½ teaspoon black pepper powder

22) ½ teaspoon salt (adjust to taste)

23) A handful of chopped green onions

Today, we are making a **delicious, spicy, and flavorful Egg Noodles** recipe in true **street style**! This is a very **easy** recipe, and you can whip it up in no time. It’s perfect for **evening snacks**, **dinners**, or **parties**. I’m sure both kids and adults will love this!

Step 1: Boiling Noodles

First, bring **3 liters of water** to a boil in a large pot. Add **1 tablespoon salt** and **1 tablespoon oil** to the water. The salt will infuse into the noodles, giving them great flavor, so they don’t taste bland.Once the water is boiling, add **450 grams of noodles** (any brand you like). Boil the noodles on **medium-high flame** for **5 minutes** (or follow the time on the packet, as different noodles might take different times to cook).

Once the noodles are boiled, check if they are well cooked. The noodles should stretch without breaking. **Turn off the flame**, and drain the noodles using a **strainer**. Immediately pour **cold water** over the noodles to stop them from cooking further. You can also rinse them under tap water. Then, add **1-2 tablespoons of oil** to the noodles and mix well to keep them from sticking. Set them aside to cool down and dry a bit.

Step 2: Preparing the Eggs

Take **4 eggs** in a bowl. Add a **pinch of salt** and beat the eggs well. The salt will make sure the eggs are flavorful. Set them aside.

Now, heat a **wok or large frying pan** on medium heat and add **2 tablespoons of oil**. Once the oil is hot, pour in the beaten eggs and cook on **low-to-medium heat** for about **1-2 minutes**. Don’t stir immediately—let the eggs cook a bit, then lightly scramble them. Flip the eggs if needed to cook both sides evenly.

Once cooked, remove the eggs from the pan and cut them into **long strips**. Set them aside.

Step 3: Stir-Frying the Veggies

In the same pan, add **2-3 tablespoons of oil**. Heat it up on **medium heat** and then add **1-inch piece of ginger** (finely chopped), **10-15 garlic cloves**, and **7-8 green chilies** (adjust to taste). Stir-fry these for a few seconds but don’t let them burn.

Stir-fry the vegetables on **high flame** to keep them crunchy and fresh. After 1-2 minutes, add **1 tablespoon of Schezwan sauce** (optional). If you don’t have it, skip it. Stir well and cook for another **1-2 minutes** on high heat.

Step 4: Adding Noodles and Sauces

Add the **boiled noodles** to the pan with the veggies. Stir-fry everything on **high flame** for about **2-3 minutes** to get that smoky flavor.

Then, add the following sauces:

1) 1 tablespoon dark soy sauce

2) 1 tablespoon white vinegar

3) 1 tablespoon red chili sauce

4) 1-1.5 tablespoons tomato ketchup

Also, sprinkle in **½ teaspoon black pepper powder** and **½ teaspoon salt** (adjust to taste). Stir everything together, ensuring the sauces coat the noodles well.

Cook the noodles for another **2-3 minutes** on high flame. This high heat will keep the vegetables crunchy and bring out the smokey flavor in the noodles.

Step 5: Final Touches

Once everything is well-mixed, add **a handful of chopped green onions** and the **scrambled eggs**. Stir everything well to combine the noodles, eggs, and veggies.

Check the seasoning at this point—if any sauce or salt is lacking, feel free to add more and stir again. Cook everything for **another minute or two** to let the flavors come together.

Step 6: Serve Hot

Your **spicy, flavorful egg noodles** are ready! Serve them **hot** for the best taste. You can enjoy them on their own or pair them with your favorite side dish. These noodles are perfect for any **evening snack**, **party**, or even as a quick meal.
